Happy with the topic just dying, but I invite anyone here to go to your nearest kendo class and approach the teacher and ask that you would like to enroll and learn how to wield the katana one handed, and if he could please help you with mastering said technique, because one day you would love to dual wield katanas, or fight with a katana and shield, then see what happens.
Since I am a practitioner of kendo, I went to my instructor and asked him this very question. He laughed and said, "It's your dollar, man". I found this hilarious and decided to post the results here. :D

You can use a katana effectively both one and two-handed. The only thing that changes is the movement of your blocks and strikes. You get more power out of holding it two-handed and focusing on downward strikes, but you get more finesse and circular movement range for parrying/blocking when you reverse the pointed direction. I'll post some video of training exercises we used to work on in a Bushido school I attended. Changing style doesn't necessarily mean loss of effectiveness, just different combat strategy.

This is what I picture my no-dachi specced merc to look like as far as skill with a no-dachi goes.

Graphic violence and language.

The sword school of Niito (something) Ryu, which goes back to Musashi, taught wielding the katana with 1 hand plus the wakizashi. Musashi was actually a big fan of wooden swords however, so maybe even he had an issue with the weight. Still, I feel like with years of training it would be completely doable.

Also it's pretty absurd that the no-dachi can be wielded one-handed in the game, but I suppose if you had TITANIC strength for a person you would be able to do it. Of all the 2H swords in the game it's probably the lightest subtype in reality, but it's still like 6 ft. long.

That's for a human. It's 9 ft. long for a minotaur, 12 ft. long for a giant, etc. etc.

I just wanted to give that image to you...a giant with a 12 ft. long sword in one hand and a shield in the other.

Musashi was a rambling drunkard who won duels by waiting people out.

But he still won. He didn't cheat or anything, he was just... better.
