I do not like how aggressive mobiles automatically detect and attack me when I sneak into the room. I can understand if perhaps it was a barbarian mobile because of their awareness, but it is any aggressive mobile.

Would it be acceptable to cause a 'lag' in the detection and engagement of aggressive mobiles against sneaking PCs? At least give me a shot to sneak by them undetected.

Yeah, sneak, polymorph, and disguise have minimal use versus NPC's. That doesn't mean the skill should be changed to work against them because of the options for abuse.

Honestly, I think all of the deception-ish stuff needs to be buffed vs NPC's.

I don't like being auto-raped by detecting guards all the time. Especially when it's a war-party of PCs/NPCs and the NPCs do all the hard work.

I agree 100%. By making more ways to deceive the NPCs. It makes the game more exciting because it is more dangerous.
