I think unjunkable symbols would be a great idea for the reasons that Goldlantern already stated. They should not zap people of other religions though.

Symbols are just another item.

They should be junkable just as some ancient arcane sword of pure energy and light can be junked.

End of story.

Symbols can only be created by favored priests of a religion. That sets them apart from every other item in the game.

Zapping symbols? Maybe to opposite alignments.

Unjuncable symbols? Fun! Then next thing we need, a 'purge holy symbol' spell for priests/paladins to be able to actually destroy them if they have a good reason to. After all, Junking a holy symbol without a good reason might [REDACTED] the god off.
No problem with an alshanite priest junking a symbol of war he got from a priest he killed, but junking the same symbol during days of peace with the war religion might cause Alshain to go 'Wtf did you do that for? Alright, I'm not gonna defend you when that pesky sargas comes with a grudge.'

Bologna. I can 'junk' an ancient adamantite breastplate that has endured ages of use, of history and the like instantly.

Symbols aren't so special, and as for zapping people that idea cries out 'special helmet'.

How would a hellion collect his war trophies, and how would anyone get into the chancel doors.

NO indestructable symbols.

Plain and simple.

I don't like the zappy idea, but I'd go for indestructible symbols now that they are not able to be found inside the game, like, say your ancient adamantite sword. They can only be found through RP with the representative of a divine agent. I'm curious as to what D says about that idea.

I doubt a few dozen symbols would even add a single percent to the number of objects in the game. Considering its not unusual to see a single room with several hundred steaks, this is puny in comparison. Divinity also would be a possible source for destruction, if you get the right deity's attention. Or you might face finding the wrong power responding to your prayer and have to deal with the consequences. Either way, unjunkable symbols only would add to RP in my opinion. Especially since they are only derived from RP, when in the past they had been more prevalent.

You should be able to sacifrice opposing symbols of your god at an altar in dedication to your alligence! >_<
