I'm trying to understand pets... and I've got a couple questions:

1) Are pets in the same price point generally balanced, or do they vary wildly? I know pets can be different classes, etc, but I'm assuming you won't get a extremely strong pet for the same price as a weak pet?
2) Does pet defense/offense scale with the owner's level? I swear one of my pets is stronger than it used to be.

Thanks!

The pet's are whatever level you purchase them at forever and ever. Pets all have special qualities, there is a basic pool that builders are allowed to use and each pet gets abilities that fall within those guidelines. You need to play around or ask around for what you want.

That pretty much answers both questions! Just a clarification though: Do the lower-cost pets have a lower quality potential? e.g. some pets cost 1 platinum 8 gold while others are 1 platinum 2 gold etc.

Also, is there a way to see what your pet has as skills? Just watch it in combat?

For the most part, you are paying for a pet by its level. That can be modified by the shopkeeper percentage as well as general economic conditions.

Level also determines how many pet ability points that a builder will have available when creating the pet.

Thanks Dulrik!

Pets also have a class, and some classes are better than others. You can use cost as a guide, but ultimately, determining stoutness in combat and other utility (eg: flying) will likely be a matter of trial and error. Or ask around.
