Does the caster's CON level affect the durability of Elementals and Undead creations?

The super pros will say yes, but to be honest with you, I'm not sure how MUCH of a difference it makes. Generally, CON is a good stat to have anyways, though. So, while you might not need to max it, you probably at least want your CON stat to be decent, like 15~.

Who cares about the undead and elemental (<-so funny). Worry more about your character's hps. Seriously, when an elemental can be dispelled, those 1500 hps don't mean [REDACTED]. It's also not hard for a paladin or white aura priest to drop undead with a single holy word. Not to mention I'm pretty sure that controllable undead can have far more hps than a wraith, and can therefore take more abuse.

When I played a warlock, the health of your elemental was the combined total of your character's hit points and mana.

Ya I notice that my elemental has way more HP than my warlock.
