For priests, art affects holy word dispel DC, spear of faith save DC, flamestrike save DC, scroll/staff save DC and other offensive cabal/religious spells.
If I were playing a priest, I would definitely not train more than six art (the max for scrolls), and only then if I was willing to dump another stat, like strength or charisma (or perhaps both) and be comfortable with the idea of wearing stat mods. If I was playing a priest that didn't have offensive cabal/religion spells, I'd probably only train three art for staves. If you -are- joining a cabal/faith that has offensive spells with saves involved, you may want to train more art, but remember that each art train is going to have to come from somewhere.
Unless I was joining *redacted* cabal or *redacted* faith, I would train at least five mana just to help with mana regen. Maxing mana is also really nice just because of the sick regen/max mana bonus it gives you.
I personally prefer to max my HP as a priest, but to each their own.
If you're intending to join a tribunal, high charisma is nice. If you're intending to join a cabal, I'd dump charisma to make room for other stats.
Dexterity is always nice for a priest: Unless you have another way you intend to get around dirt kick (Or just don't intend to PvP much), fight the urge to use DEX as a dump stat because dirt kicking priests takes them almost completely out of commission.
And of course, don't ever use CON as a dump stat no matter what class you play.
To sum up: Strength isn't that important unless you're a large-sized heavy armor priest. DEX is always important if you intend to PvP because dirt kick will own your face. Keep CON at least in the mid "healthy" range if not durable. INT and WIS are key, INT moreso. CHA is usually only important if you join a tribunal. Three art max unless you feel like modding for stats in order to have more effective offensive cabal/faith spells. At least five mana to help with mana regen (You can always mod for wisdom, but modding for mana doesn't give you the innate regen bonus that training ME does)
