You gain exp from all spellcasting. Each spell, as far as I can tell, rewards a unique amount of exp, and combat spells (even if instant-kill) seem to reward more. My case example here is faerie fire, which causes your pulse to race. I gained quite a number of ticks (this was two years ago, as a caveat) casting faerie fire and cancellation on myself.

As a paladin, you are better off using spear of faith over bolt of glory for leveling against undead. Bolt of Glory is still fine against just plain evil NPCs, but if they are undead and you are trying to level use spear of faith.

That made me laugh! I remember that... Ugh.

So along the same vein does finger of death work the same way? FoD does damage but can cause insta-death... is FoD's insta-death just a save therefore no xp?

FoD gives XP. Fod does damage equal to your opponents max hp I think. Then saves and MP and natural bonuses bring that damage down.
